Sweet Beet, Mango and Arugula Salad with Garlicky Meyer Lemon Dressing
This is a very simple recipe that lets the flavors of the ingredients shine through. The arugula and nasturtiums in this photo are from our edible back yard. The peppery arugula and nasturtiums compliment the sweet and tangy veggies and fruits. This salad is delicious and very healthy!
Wash and cook beets. I used golden and red beets and cooked them in a pot of simmering water for about 45 minutes. You could also roast them in the oven. Once they’re cooked, let them cool, peel and chop into small squares or any way you like. Chop fresh mango.
Wash and spin salad greens. Make a dressing with the juice of 1 meyer lemon, 1 tsp rice vinegar, 1 tsp honey, 1 smashed open garlic clove (if you let it sit in the dressing, it’ll flavor it just enough), salt and pepper, pinch of dried basil.
Place the chopped beets and mango on the bed of arugula, dress with the garlicky lemon dressing, garnish with any edible flowers you have. Yummy!

Today is the anniversary of the day I started my Scentsy journey.
Scentsy launched in the UK one year ago today - from 0 Consultants to 470+ in a year isn’t bad going, especially in a recession. Why and How? Well may you ask.
To answer the Why? Why has Scentsy grown so rapidly in a recession? Because the products are like nothing else available in the UK. People fall in love with the clean, safe way that Scentsy offers them of fragrancing their home. Not only that, with 80 fragrances to choose from, there’s something for everyone, and everyone can change their fragrance every day and not get bored.
How have Scentsy grown in a recession? By offering superb products (as I’ve said), but also by going that extra mile. As a direct sale company Scentsy rely on their Consultants to be their ambassadors, especially as the head office is in the US. To empower ambassadorship Scentsy treat their Consultants with honesty and integrity. Do they get it wrong sometimes - of course. But the great thing is, they’re happy to put their hands up and say they’ve got it wrong - and put it right quickly. Scentsy is a transparent company too.
Transparency - now there’s a buzz word if ever I heard one. But for Scentsy it’s not a buzzword, it’s who they are. They don’t hide extras that you have to pay to become a Consultant, they don’t make their compensation plan so bamboozlingly difficult to understand that you give up trying before you’ve even started. Instead, they offer repeated training on how the compensation plan works, so if you don’t ‘get it’ the first few times, you can be sure there’ll be plenty of other times. And one time you will ‘get it’ because it’s really not that hard, you just have to change the way you think a little.
And talking of changing the way you think. You’ll do that when you get to know Scentsy. More than you ever thought possible. And not because you’ll be angry at being used, not earning the money you thought you would, or because you’ve had to pay for the hostess rewards yourself. No, the reason you’ll change your thinking is because you’ll start to think like Scentsy. About giving, being straight forward, helping others, giving more than you take, charity, helping others and giving. No I haven’t gone mad and not realised I’ve said a few of those words repeatedly. Which makes for happy hostesses and happy customers.
